We like spicier flavors and I find slow cookers blunt flavors…so doubled chipotles in adobo amount. Used 2 giant chicken breasts…they were cooked in 2 1/2 hrs on high. Didn’t add the cut up tortillas, served with rice, fresh toppings and tortilla chips. And the homemade enchilada sauce is excellent and easy to do!

This recipe was easy and delicious! I would have liked it a touch spicier even with the jalapeños so next time I’ll add cayenne and a bit more salt. I didn’t use the tortilla strips because I totally forgot and used Oaxaca cheese for the most amazing melt. Recipe was overall great and can’t wait to make again!

I added a can of corn and 1/4 tsp. cayenne to the enchilda mixture. This helped to thicken the mixture. I did not serve this over rice.
