So good! Even better reheated for lunch the next day. I used canned enchilada sauce, doubled the corn tortillas and added canned green chilis. Delicious!

Any thoughts on using flour tortillas?

In reply to Rebecca. I can’t eat corn tortillas because of my Crohn’s disease. So I was wondering as well about using flour tortillas. So thank you. I wonder if once you cut or tear the flour tortillas if you cooked them in a pan first to crisp them up a bit I’m talking just enough to help them sit in the sauce better without getting to mushy also they might not stick together ether.
