These simple and super easy frozen ice pops are made with coconut milk and pureed mango, and I am OBSESSED. My new snack all summer long!
Coconut Mango Ice Pops
We’re having a heat wave here in New York. The kind of heat that you don’t want to be outside, unless you’re in a pool or sprinkler keeping you cool. I won’t dare turn my oven on this week, even grilling is out of the question until things cool down.
But these ice pops… I’m obsessed!! I’m making these all summer long, I can’t even begin to tell you how delicious they are. I don’t think any of my other ice pops come close. And since so many of you asked about what popsicle mold I use, I linked the popsicle maker from Progressive available on Amazon here.

Coconut Mango Ice Pops
Ingredients
- 3/4 cup unsweetened coconut milk beverage
- 1 3/4 cups diced ripe mango
- 1 cup canned light coconut milk
- 1/4 cup sugar, I used raw
- 2 tablespoons honey, I like raw, stevia would work too
Instructions
- Puree mango in the blender with 1/4 cup of the coconut milk beverage and sugar and blend until smooth.
- Set aside.
- In a medium bowl combine the remaining coconut milk beverage, canned coconut milk and the honey; mix well until combined thoroughly.
- Pour about 2 tablespoons of mango puree into each popsicle mold then pour coconut milk mix, until all the molds are filled.
- Place the molds in the freezer and freeze until solid, about 5 to 6 hours.
What is a “coconut milk beverage” vs. coconut milk?
Where do you get the unsweetened coconut milk beverage? I’m on Long Island (Suffolk County)
Can you use ff yogurt
Gina,
Would almond milk with here instead of coconut milk?
Thank you
Mangoes have been my all time favorite fruit growing up. Very few have the passion and the story behind mangoes that I have. Mango trees (3 best varieties) in grandpas garden, free for the picking, some so ripe we’d scoop them off the lawn unbruised/fresh. Eat them whole, juice them and blend them with coconut etc. Long story short we literally could harvest them. Anyway even our friends used to take a bunch home and always raved about how large and decadently delicious these ‘king of fruit’ were.
The largest mango producing country by far is India and many strains of mango originated from the seeds of these fruit, now widely popular and available worldwide.
Skinny taste has taken my all time favorite combo and produced these wickedly ‘gobsmacking’ Coconut Mango Ice pops. All summer long these have been accounting for a lot of space in the freezer at home.
All I can say is, I hope they never stop producing what’s in my opinion a true classic treat.
Thanks and keep em coming. Cheers! 😉👍 5 stars & the Sun ☀️ and the Moon 🌝 !
I made these last week, LOVED them and will be making them again soon. I prefer my frozen fruit bars to be a bit more on the tart side, so I may add less sugar to the mango part, depending in the ripeness of the mango, but that’s just my personal preference. These ice pops have been a great low cal substitute for an after dinner sweet treat for me. Thanks for another amazing recipe!
Where did you get your molds? Have specific ones you like to use?
Thanks!
What is a coconut beverage?
Coconut milk (found in the dairy section) in a carton.
Sorry, I can't find coconut beverage in my store. However, I do have a coconut tree outside my door (next to the mango tree). Can I use fresh coconut milk? Kimo in Haiku.
I spent some time in Panama and learned to LOVE mango! I am certainly going to try this out this summer! Thanks for the idea!
I live in Australia but don't know what coconut beverage is, Is it coconut water
We have coconut milk and cream etc and mango's are fairly plentiful in the summer here in Qld but coconut beverage? no idea
Can we use frozen mango?
Im not a mango fan but a big fan of coconut. Can I skip the mango ingredient so they are just coconut pops? these looks so good :)!
How would the points change on this if I used regular canned coconut vs the light?
Just finished eating one right now… yum-o!!!!
These look so great! I didn't have a popsicle mold so I made them in cupcake form with some tweaks. Check them out on my blog here: eathardworkhard.blogspot.com
Adding in chia seeds!
These are soooooooo good. So, so good. My kids will be eating these for weeks to come!
OMG!! Looks stunning….. This will definitely be there with my raw snack week-end plan. Can't wait till Saturday ;p
Gina- these look AWESOME! I just got the ingredients and can't wait to try!
kainaat-They have Silk Coconut Milk in the refrigerated milk section at Walmart.
I'm from Dubai, so things like Coconut milk and Almond milk is not always available everywhere, and if they are, then they're quite expensive, sadly. Which is why I was asking if I can use Coconut water instead.. or maybe something else? I was thinking maybe some mango shake or something.. will probably experiment!
Coconut water would likely work well for these! Just an icey version instead of creamy version. I might try them this way too since I have an open container of coconut water. 🙂
I just saw your reply above. I think pineapple and coconut water might work well together. But I would love to hear how your version turns out!
I don't think it will be easy for me to find coconut milk beverage.. Coconut water drinks, yes, but milk beverage, no. Can that be a substitute instead?
I would not recommend that. Coconut water tastes sour to me. Maybe you can use almond milk?
Hmm.. I was thinking that too, but I'll have to make it myself. Not worth buying, it's way too expensive. A litre of Almond milk costs almost $10. I read somewhere a substitute would be getting full cream coconut milk and adding water to it, will most probably try that. Thank you for the suggestion, though! 🙂
These look so refreshing and delicious!
Looks so good! Can't wait to try it out with my kids.
I love the blue-washed wooden background! Gorgeous styling.
Can this be done with pineapple instead of mango?
Sure!!
you know I love anything with mango. also LOVE the background.
LOL!!
yum, yum!

Just looking at it makes me feel a little cooler….
yum so refreshing! thank you for sharing Hugs!
These look like such a good summer treat! And look easy enough to make. I'll have to go get some coconut milk and Popsicle molds before the summer is over 🙂
these look amazing!
they are!!
Coconut milk beverage is in the refrigerated section, like Silk Coconut Milk. Coconut milk, or light coconut milk, comes in a can near the ethnic foods.
How is "coconut milk beverage" different from coconut milk? Can you recommend any brands to look for?
less fat, So Delicious, Trader Joe's, Coconut Dream, Silk all carry it, and Almond Breeze carries an almond-coconut milk blend.
These look so beautiful and refreshing! Seriously perfect through this heat wave!
I cant wait to try these. What is a coconut milk beverage? Where would I find that in the grocery store?
It's usually refrigerated in the milk section. Also in the cartons. So Delicious, Trader Joe's, Coconut Dream, Silk all carry it, and Almond Breeze carries an almond-coconut milk blend.
That was my question also! So then what is the difference between the coconut milk in carton and the coconut milk in a can? Thank you ?
One is much thicker and higher in fat. The other is meant to drink.
Thank you!
I'm nearby in Jersey and I'm definitely feeling the heat! These are a great way to cool off!
These will be on my next grocery list. I made the peaches n' cream ones for a 4th of July BBQ last week, and they were such a hit. That said, I can't imagine how these taste!

Yummy! Coconut and mangos are my favorites right now! Gina, if I wanted to skip the sugar and avoid stevia or any sweeteners what could I use to replace? Could I use maple syrup or additional honey?
Sure, additional honey would be perfect!
Nectrese is one of my new favorites!
These look fantastic, Gina! I love coconut in pops!
