Tips for perfect scrambled eggs
- Pan: Use a nonstick pan sprayed with oil to ensure that the eggs don’t stick.
- Cottage Cheese: Any brand of cottage cheese will work, but my favorite is Good Culture’s low-fat cottage cheese.
- Cooking: Use a rubber spatula to gently fold the eggs over for about one and a half to two minutes until they are just set.

- 1/2 cup 2% cottage cheese, I like Good Culture
- 1/8 teaspoon kosher salt
- fresh ground black pepper
- olive oil spray
Instructions
- In a medium bowl, whisk the eggs, cottage cheese, kosher salt and black pepper, to taste with a fork.
- Heat a medium nonstick skillet over medium-low heat and spray with oil. When warm, pour the eggs in.
- Using a rubber spatula, slowly scrape sections of eggs to the center of the pan as the bottom starts to set, creating soft folds for about 1 1/2 to 2 minutes total until just set.
- Remove from the heat and serve.

I would never have considered this recipe because of the cottage cheese. I do not like the texture of it, and would never consider eating it because of this. But, I also hated missing out on something so full of protein. After reading others reviews who mentioned that you don’t even taste the cottage cheese, I decided to give it a try. I went in with very low expectations. Well, I was very pleasantly surprised! The chunky cottage cheese melts down perfectly. You can’t even tell its in there. I did 2 eggs and 1/4 cup low fat cottage cheese and was a little worried I’d see the cottage cheese chunks but they melted and the end result was delicious! Not watery, light and fluffy with a great taste! I was skeptical but this has proven me wrong! Such a great way to get protein in your breakfast.

Hello! A bit confused on the calories. I used 80g 2% cottage cheese and 2 extra large eggs and my calories were in the 400 range. I’m relatively new to calorie counting, but this seems off to me. What did I do wrong?
You used Xtra large eggs plus 2% cottage cheese. Next time try large eggs (72cal ea & 6.3g protein) & low fat cottage cheese (90cal 1/2 cup 13g protein). That could be a 234 cal/25.6g protein breakfast! Not bad!
the serving size is for half the recipe, I think that’s why your cals aren’t adding up

Had a watery residue in the frying pan. Eggs tasted ok after I blotted them with a paper towel. What did so do wrong?
Cook the longer. The cottage cheese has some water so you’ll have to let it cook out
Maybe blend the eggs and cottage cheese in blender. I used my little NutriBullet!
Probably due to the fact the recipe has salt added prematurely which is drawing out moisture from your eggs creating water in the pan and leaving you with dry scrambled eggs. Try adding the salt when the eggs are halfway done.

Delicious! I made mine super simple, just halved the recipe and generously salted and peppered. They did have a little more liquid than normal, but I just cooked them longer. The cottage cheese melted into it like shredded cheese would have.

Yes! That’s what I did. I used one whole egg and 2 egg whites for myself (still used 1/2 cup cottage cheese) and it was delicious.
I have been unable to eat eggs since I had covid. I can now eat them again cooking them this way! The cottage cheese adds a good flavor and takes away the bad taste. I’m so excited to be able to add eggs back to the list of things I can eat!!!

The taste was really good but mine were very very runny and liquidy. It was the first time I’ve made. Does anyone have any tips? I’d really like to make them again as I am always looking for a way to get more protein in to my diet. I’d give it 5 stars for taste but 3 for how runny – although maybe it’s user error?
I cooked mine a little longer so they wouldn’t be runny. You could also strain the cottage cheese; sometimes it’s watery.
I don’t care for eggs or cottage cheese, but had to try this after reading the comments. It was absolutely delicious!! Had it for a quick and easy dinner. This will now be the only way I eat scrambled eggs! I’ll have to try this next in a tortilla wrap as a breakfast burrito.

These are a big surprise and have quickly become my favorite way to prep scrambled eggs. The cottage cheese actually develops a nice chewiness similar to when I add cheddar to a scramble. I like to add chives when beating the eggs.

This was delicious but the cottage cheese made it very wet. I should have drained off the extra liquid because when I put the eggs in a tortilla, it was quite soggy. Going to try it again and drain the cottage cheese first and see how that works.

I hate cottage cheese. And I’m not fond of scrambled eggs. But I’m currently pregnant with a lot of food intolerances and my proteins in my blood are dropping. I tried this on a whim, and the combination turns into something magical on the stove. The eggs are light, fluffy, and less eggy tasting, and the cottage cheese adds richness. It remains visible in the eggs but I can’t taste it. I do use full fat cottage cheese as weight loss was a struggle for my first two trimesters. Thanks for the recipe!

I was really hoping I would like this since I like cottage cheese and eggs. Sadly, it came out a big wet sloppy mess. Not sure what I did wrong. Should I have drained the cheese first? Cooked it a little longer to dry it out? Will try again.
I like to make my meals for the week on Sunday when I am training classes during the week, this keeps me from not eating until late and then eating everything in site. I used 4 x-large eggs and only 1/4 cup of cottage cheese because I wasnt paying attention to what the recipe said and a little bit of everything but the bagel seasoning and pepper and these turned out great and made enough for 3 breakfasts and because they are so creamy they should heat up beautifully. I tried so hard to like this. I’m not a cottage cheese fan but I love the Savory Bowls. I think I will try again with small curds. It tastes good, but the texture was hard to get by. Maybe I’ll throw in some mushrooms next time, too.

Sounds delicious. The protein count seems high for 1/2 serving. Does Good Culture contain 30 grams of protein/half cup? That would be about twive what other cottage cheeses contain.
1/2 c. of good culture cottage cheese has 14 g protein (so 1/4 c. has 7 g. protein). 2 eggs have 12 g. protein. There’s your math.

Do you think this would work with greek yogurt or quark? The only cottage cheese at my store seems to be filled with a lot of ingredients like GUAR GUM, MONO AND DIGLYCERIDES, XANTHAN GUM, LOCUST BEAN GUM. I will check if they carry better brands but thought maybe could up the protein with quark or yogurt instead?

Seriously-you have to try this recipe but use Good Culture cottage cheese. That’s what the author of this recipe preferred & it does matter. Ingredients are a very short list & are all simple clean ingredients that you can pronounce. Very creamy small curd style & not watery.

I made the cottage cheese scrambled eggs and it was just too runny. It look a pretty long time dry out enough to not look and feel raw. I love the idea, but not the way it came out.
Do you have an immersion blender? I mixed it with my immersion blender on the lowest setting, as I figured mixing with a fork would be insufficient. The result was very nice, though a bit fiddly to cook.
